Aster tripolium was known as a famine food in the Netherlands in harsh times. Today it's a delicacy in the Netherlands and abroad.

Sea Aster is very productive and can be cut several times with a regrowth of young shoots every 3-4 weeks.

Shortly stir the Sea aster or sea spinach in some butter and serve with fish or lamb. The texture of the plant is kept well after cooking.
